Hummus is a staple in many vegan diets, and for good reason. Not only is it delicious, but it’s also packed with protein, fiber, and other nutrients. If you’re looking for a tasty snack or a healthy dip for your veggies, hummus is the way to go. But what makes the best hummus? Here are some key ingredients and tips for making the perfect batch.

Chickpeas

The foundation of any good hummus is, of course, chickpeas. You can use canned chickpeas for convenience, but if you have the time and energy, cooking your own from dried is always best. Make sure you cook them until they’re nice and soft, which will make for a creamier hummus. You can even make variations with almost any type of legume, I especially love peas and lentil hummus for sandwiches and toasts.

Tahini

Tahini is a paste made from ground sesame seeds, and it’s a crucial ingredient in hummus. It adds a nutty flavor and a creaminess that is irresistible. Make sure you use a high-quality tahini for the best results. If you can’t find tahini in your local store or you can’t consume sesame seeds, you can substitute it for another seed/nut butter like peanut or almond.

Lemon Juice

Lemon juice is a key ingredient in hummus because it adds brightness and tang. Freshly squeezed lemon juice is always best, but if you’re in a pinch, bottled will do. Just make sure it’s 100% lemon juice and not from concentrate. You can also add lime juice if you don’t have lemon or you don’t like it, it adds freshness and a pinch of sweetness.

Garlic

Garlic is an optional ingredient, but if you’re a garlic lover like me, it’s a must. Roasting the garlic first will add a subtle sweetness and make it easier to digest. If you’re not a fan of raw garlic, you can use roasted or even sautéed garlic.

Olive Oil

Olive oil adds richness and a silky texture to hummus. It’s best to use a high-quality extra virgin olive oil, but any olive oil will work. Be sure to add it slowly while the food processor is running to ensure a smooth consistency.

Salt and Pepper

Spices are crucial in balancing out the flavors of the other ingredients. Start with a little bit and add more to taste.

My secret ingredient: Ice Cubes!

Yes, that ‘s right! I put two or three small ice cubes with the rest of the ingredients before processing. It’s a game changer, trust me. They make your hummus silky smooth and so creamy, it’s wonderful.

Now that you have the key ingredients, here’s how to make the best hummus:

Ingredients:

  • 1 can of chickpeas, drained and rinsed
  • 1/4 cup of tahini
  • 2-3 tablespoons of fresh lemon juice
  • 1-2 cloves of garlic, roasted or raw
  • 2-3 tablespoons of olive oil
  • Salt and pepper to taste
  • 2-3 small ice cubes
  • Water as needed to achieve desired consistency

Instructions:

  1. Add the chickpeas, tahini, lemon juice, ice cubes and garlic to a food processor.
  2. Turn on the food processor and slowly drizzle in the olive oil while it’s running.
  3. Add salt to taste and blend until smooth.
  4. If the hummus is too thick, add water a tablespoon at a time until you achieve the desired consistency.
  5. Serve with your favorite veggies, pita bread, or chips.
